Yes, 1 star. So disappointed in this book. I raced out to purchase after reading reviews. My first experience with low carb cooking/eating. Recently diagnosed with diabetes. I've always watched fat. Boy this book is full of it! I tried the zucchini 'fries'. Supposed to cook for 15 minutes, I cooked 30 - still no crispiness, and yes, I had them on a rack. They were limp as noodles. I thought well, just eat them with a fork - new zucchini recipe. Ate one bite, so salty they were disgusting. Into the trash. Got up with a new attitude this morning, made the 'delicious' banana muffins. Oh. My. Goodness. They never really browned. The appearance was lumpy, texture was grainy, they were so so heavy and so so sweet. Sure didn't look nor taste like any muffin I ever saw! Recipe made 6 - 5.75 in the trash. Out the money for the book and many ingredients......I should put the book in the trash with the food. Lots of recipes for marinated veggies, roasted veggies......I don't call these recipes, I call them common knowledge. I also bought his other book at the same time. Haven't used it so that one will go back for 2 reasons. 1) bad recipes in the other book and 2) no calorie or fat content listed in the other book - only carbs. I have to see the fat content because I just can't eat all that fat that's in a big part of the book. Many recipes unusable right off the bat.

Very useful cook book. Low carb cooking is a different set of ingredients in many cases and there is much to be learned. Or unlearned. It is worth the trouble if you have not been able to loose weight. George Stella's recipes are a big boost to the diet plan. Weight loss success is a journey, this book is a helpful hand.

I love this book! There are some really fantastic recipes. My favorite (I think) is the "Mac and Cheese" (made with Cauliflower) - but there are so many great low-carb recipes. The recipes are quick, easy and creative. Try it out!

I love Stella's recipes! This is my second cookbook of his. It's a flavorful way to stay low carb and still enjoy great food. My only critique is that I would be much more motivated if there were pictures to accompany the great recipes.
